Colleen O’Bryant, herbalist, will begin the afternoon with a guided walk around her Apothecary in Sperryville to forage for some of the meal’s ingredients. She will discuss her favorite plants: both the traditional medicinal uses and their culinary preparations.

After the foraging walk, we will sit down and enjoy a foraged feast by Connor Hartman, with an expertly crafted and unique seven-course supper based on the botanical roots of our woods and Appalachia. 

This will be a day to celebrate, educate and expand your knowledge of both the culinary and medicinal uses of plants and the magic that they are. 

In the event that the day is not hospitable to our adventures we will have a rain date.

Connor Hartman has spent the last decade working for some of the country’s most forward thinking restaurants spanning from coast to coast. His travels have led him to hold positions in the kitchens of southern food mecca Husk in Charleston, S.C., the three Michelin starred Inn at Little Washington, nestled in the foothills of the Blue Ridge, and to an archipelago off the coast of Washington State to work for The Willows Inn, a destination restaurant lauded for its use of hyper-local and inventive cuisine. And over the years, with his extensive knowledge of the land, he has supplied some of the nation’s best kitchens with wild foraged delicacies. Currently, Connor has rooted himself back to the Blue Ridge and holds the title of Sous Chef at Three Blacksmiths (who was just voted #2 Best New Restaurant by USA Today). Colleen O’Bryant started loving plants and their magic as a little girl climbing trees to pick the not quite ripe plums of the forest.  She now picks the plums at their peak and enjoys all the fruits of the forest. Owner and practicing herbalist at Wild Roots Apothecary, Colleen's goal in life is to share her passion of plants with as many folks who will listen by teaching classes, bringing people along on the adventure of re-discovering traditional herbal medicine and expanding her herbal repertoire on a daily basis.
